                                  Dal Tadka - Dhabha Style

Shopping List:

1. Ginger (whole)

2. Cilantro Leaves (coriander leaves, kothamalli)

from the Pantry:

1. Tuvar Dal - 1/8 cup

2. Turmeric Powder - 1/8 tspn.

3. Red Chilli Powder - 1/8 tspn.

4. Jeera Seeds (whole) - 1/8 tspn.

5. Mustard Seeds (Rai, Kadugu) - 1/8 tspn.

6. Asafoetida - a pinch

7. Cooking oil (or ghee if preferred) - 1 tbspn.

8. salt - as required

Method:

1. measure 1/8 cup tuvar dal in a pan and wash well with water and drain.
    add 1 cup water to cover  and a little bit more. 

2. cook the dal on high heat adding a bit of cooking oil and 1/8 tsp. turmeric powder.
   when dal is trying to boil over, reduce heat and keep cooking.
   If dal feels uncooked, add a little bit more water ( maybe 1/2 cup) but not much, till dal is fully cooked and blends well with water.

3. remove dal from heat after cooked and set aside.
   add salt as required, 1/8 tsp. chill powder and a pinch of asafoetida.
  Also add a tiny bit finely chopped ginger.

4. in Tadka Pan, pour 1 tbsp. oil, and on low heat let oil heat up.
    to this add Rai seeds and Jeera seeds and let Rai splutter.
    Remove from heat and add to dal.

5. add cilantro leaves a little bunch washed and finely chopped to dal as garnish.

6. Serve dal hot with cooked white Rice and ghee, Rotis or Naans.
