Aloo Methi Subji ( easy way)

Prep Time: 35 mts.
Grocery List:
1. Potatoes (any kind) medium 2 washed and chopped into 8 pieces
2. Cilantro leaves a few washed and chopped finely
3. Ginger 1/4 inch piece washed and finely chopped
From the Pantry:
1. Salt to taste
2. Turmeric powder a pinch
3. Red Chilli powder. a pinch
4. Whole Jeera OR Jeera ( Cumin powder) 1/8 tspn.
5. Asafoetida a pinch
6. Rai 1/8 tspn.
7. Water 1/2 cup
8. Cooking oil. 2 tbspns.
9. Kasoori Methi 1/4 cup
Method:
1. In a deep pan, add water and potatoes and keep on medium heat. Add turmeric and cook potatoes for minimum 15 mts. or till cooked. Run knife through potatoes to see if cooked.
2. Remove from heat, drain water. Peel potaotes and keep aside.
3. In a flat heavy pan, on low heat, add oil. To this add Rai, Whole Jeera OR Cumin powder and asafoetida. Let Rai splutter. Turn off heat. Add Kasoori Methi and sauté till raw smell goes away and leaves turn dark green and crisp.
4. Add peeled potatoes, salt and red chilli powder. Turn heat to medium and mix potatoes well with spices.
5. Keep turning potatoes till bit brown on all sides.
6. Remove from heat and garnish with cilantro.
Note: Serve hot with Basmati Rice, Kadhi, Raita, Rotis, Pooris, OR Naan.
