                                                      Quick Potato Curry ( no boil)

Grocery List:

1. Potatoes (any kind) medium 2 washed and chopped into small cubes

2. Cilantro leaves     a few washed and chopped finely

3. Curry Leaves ( optional).   a few washed and chopped



From the Pantry:

1. Salt to taste

2. Turmeric powder a pinch

3. Red Chilli powder.  a pinch   ( can use curry podi or sambar podi also)

4. Asafoetida   a pinch

5. Rai  1/8 tspn.

6. Water 1/2 cup

7. Cooking oil.  2 tbspns.


Method:

1. In a flat heavy pan, on low heat, add oil. To this add Rai and asafoetida. Let Rai splutter.

2. Add cubed potatoes, salt and red chilli powder ( or Sambar podi or curry podi). Turn heat to medium and mix potatoes well with spices.

3. Keep turning potatoes till bit brown on all sides. You can sprinkle a bit water to let potatoes cook well ( optional).

4. Remove from heat and garnish with cilantro and curry leaves.







                                   Note: Serve piping hot with Plain Rice, ghee, Rasam or Sambar.
