Aloo ki Tikki is a very popular street side snack throughout Northern India. Usually served with sweet and green chutney, can also be served with ketchup. Here I present the original recipe, which can be prepared with a short shopping list, and a few spices and condiments off your kitchen shelf……….






Aloo Ki Tikki

                                                                                                             Prep time: 35 mts.
                                                                                                             Serves: 4
                                                                                                             Makes: 18 medium sized tikkis

Shopping List:

1. 8 medium white potatoes ( washed, cut in half)


2. Cilantro( coriander leaves)= a bunch ( washed, chopped fine)


3. 3 Green Chillies ( optional) ( washed, chopped fine)


4. 1/4 inch ginger ( washed, chopped fine)




from the Pantry:

1.  Salt to taste


2. Red chili powder ( 1/4 teaspoon)


3. Garam Masala powder ( 1/4th teaspoon)


4. Ketchup


5.  Heavy skillet


6. Oil to shallow fry




Method:


 1.  Wash, cut in half, and boil potatoes in slightly salted water. 


 2. Check periodically by inserting a knife through potatoes. 


 3.  If potatoes are done, then knife will go through to end. 

  
 4.  When done, peel potatoes and mash well. 

 5.  To this, add finely cut cilantro, green chillies(optional), ginger, red chili powder and garam masala powder, and little salt to taste, as we already boiled potatoes with salt.


 6.  Make small rounds, and pat flat with inner palm of hand in shape of tikkis. 


 7.  Coat a little oil to skillet, and place tikkis in skillet. 


  8.  Brush tikkis well with oil , turning when brown, and checking on both sides. 


  9.  Use a slotted spoon to lift tikkis out of skillet and drain on paper towels when turns medium brown on both sides.


  10. Serve hot with ketchup.     
                                                                 




Tip: Can be served sandwiched between Burger buns and topped with cut round onions, tomatoes and ketchup.

5. Add chopped ginger, chillies, cilantro to mashed potatoes
