LIME CARDAMOM OLIVE OIL CAKE

From the Pantry:

For the candied lime:

1. Sugar 1 cup

2. water  1 cup

3. Cardamom pods: 2 ( crushed) OR 1/4 tspn. ground cardamom pwdr.

4. 3 Limes, thinly sliced rounds


For the cake:

1. 1/2 cup applesauce 

2. 2/3 cup sugar

3. 1/2 tspn. salt

4. 1/3 cup, plus 2 tbspns. extra virgin olive oil

5. 1 tspn. vanilla extract

6. 5 cardamom pods OR 1 tspn. ground cardamom powder

7. 2 tspns. lime zest

8. 1/8 tspn. baking soda

9. 1/2 tspn. baking powder

10. 3/4 cup, plus 2 tbspns. all purpose flour


Method:

1. Wash the limes. 

2. Cut the limes into 3-5 mm or 0.15-0.20 inch thin slices crosswise carefully.

3. In a heavy saucepan, on medium heat, combine ! cup sugar, ! cup water and 2 crushed cardamoms.

4. When mixture comes to boil, reduce heat to medium low and add slices lime pieces and let simmer for 15 mts.

5. Preheat Oven to 345 degree F ( 175 degree C).

6. Beat 1/2 cup appleasauce, 2/3 cup sugar and 1/2 tspn. salt with electric or hand mixer until fluffy.

7. Slowly drizzle in the Olive oil into the fluffy mix ( step 6).

8. To step 6 and 7 add, vanilla extract, lime juice, cardamom, and baking soda. Mix the whole thing well with spatula.

9. In a separate bowl, sift the baking powder and flour together and add the applesauce mixture to this.

10. Brush 20cm or 8 inch diameter baking pan with oil.

11. Line the bottom of baking pan with parchment paper.

12. Arrange all the syrupy Lime pieces at the bottom and sides of pan.

13. Now gently pour the batter into the pan, over the lime pieces.

14. Slide the pan into the preheated oven ( place additional tray under pan to catch any syrupy drops).

15. Bake the cake for 30 35 mts. or until knife inserted comes through clean.

16. Allow cake to cool ( min. 10 mts.).

17. Brush some of the remaining lime cardamom syrup on top of the cake.

18. Also, if preferred, drizzle a triy amt. of olive oil directly onto the cake slices, before serving.


Note: Enjoy as a tea time snack or just as it is.....
