Green Beans Curry
Green Beans Curry
Cuisine: Indian Vegetarian

Serves: 2
Grocery list:
1. Cut Green beans. 1 cup washed
2. Cilantro leaves. A bunch washed and chopped fine
3. Curry leaves. A few washed and cut in half
From the Pantry:
1. Sambar powder - 2 Tspns.
2. Salt to taste
3. Asafoetida powder - a pinch
4. Rai ( kadugu/ mustard seeds) - 1 tspn.
5. 1/16 cup water to steam vegetables
6. Cooking oil any - 1 tbspn.
Method:
1. In a heavy flat pan add oil, keep heat on low and add asafoetida, Rai and let Rai splutter. Add washed green beans and salt and Sambar powder. Mix well. Add water and let steam well on medium heat. After well cooked, turn off heat and garnish with curry leaves and cilantro leaves.
Note: serve hot with rotis or plain rice.
