Grocery List:
1. Medium white onion. 1 finely chopped
2. Curry Leaves. a few washed and chopped
From the Pantry:
1. Sambar Powder. 2 tspns.
2. Vaththa Kuzhambu powder ( Grand Sweets) 1 tspn.
OR
Sambar Powder like above 1 tspn.
3. Cooking oil. 1 tbspn.
4. Rai. 1/8 tspn.
5. Urad dal. 1/8 tspn.
6. Methi seeds. 1/8 tspn.
7. Asafoetida. a pinch
8. Salt. to taste
9. Jaggery. 1/8 tspn. ( cut the soft jaggery with knife to get pieces)
10. Tamarind Paste. 1/2 tspn.
11. Water. 3/4 cup
Method:
1. In a heavy deep pan, add cooking oil a pinch and saute the onions till raw smell goes away on low heat. Turn off heat. Add the Sambar powder and Vaththa Kuzhambu powders to the pan and coat onions well so Sambar powders are not raw smelling anymore.
2. Add water to the pan and turn on low heat. Add salt, jaggery, tamarind paste and let boil for at least till the mixture is bit thick. turn off heat.
3. In Tadka Pan, on low heat add cooking oil, asafoetida, rai, urad dal and methi seeds. Add to kuzhambu.
4. Garnish with curry leaves.
Note: Serve hot with Plain Rice, ghee and any Poriyal curry.
