Cuisine: South Indian Vegetarian

Prep Time: 20 mts.


Grocery List:

1. Idli Batter OR Idli and Dosa Batter Combo   4 ladlefuls


From the Pantry:

1. Cooking Oil 1 tspn.

2. Ice cold water 1/16 cup

3. Water 1/2  cup


Method:

1. In a deep huge pot, add 1/2 cup water  put lid on and turn on heat to high.

2. Put Idli steamer inside the pot to make sure the last Idli steaming plate is not immersed in water but just a little above water. Remove the Idli Steaming plate and keep aside.

3. Apply oil to Idli steaming plates.

4. Pour the Idli batter onto the plates uptop 3/4ths ( this is as Idli rises after steaming).

5. Put the Idli steaming plates into the Deep pot, put lid on barely closed ( See PIC) and turn heat to medium ( by now the water should be boiling).

6. Steam the Idlis for minimum of 10 mts. ( 12 minutes ideal).

7. Turn off heat for Pot.

8. After 2 mts. if you want to eat Idlis right away, pour a little Ice Cold Water around the idlis on the steaming plates to cool the idlis down so they can be scooped easily.

9. After adding ice cold water to steaming plates, scoop idlis out with spoon or butter knife.








                                        Serve Idlis piping hot with Sambar, Chutney, Milagai Podi.
