                                                     Podalangai ( Snake Gourd Curry)

Grocery List:

1. Podalangai ( Snake Gourd) medium length washed and cut.

2. Curry leaves a few washed and chopped

3. Cilantro leaves a few washed and chopped finely












From the Pantry:

1. Chilli powder. a pinch

2. salt to taste

3. Rai. 1/8 tspn.

4. Asafoetida. a pinch

5. Cooking oil.  2 tbspns.

6. Water  1/16 of cup



Method:

1. In a heavy flat Pan, add cooking oil, rai and asafoetida. Let Rai splutter on low heat.

2. Add washed Podalangai, red chilli powder and salt and mix well and turn heat to medium.

3. Add 1/16 cup water to vegetables and wait till water evaporates. Keep turning vegetables from time to time till vegetables turn bit brown and crisp. Turn off heat.

4. Garnish with cilantro and Curry leaves.
